About Us
The Confectionery House’s sweet story began in 1985 when Jim Didolis and Serge Meilak, two confectionery maestros from Rowntree Hoadley, decided to chocolate their own path. With vast industry experience between them, they recognised a gap in the market and set out to fill it. They began with panning operations in one small factory before steadily expanding into additional processes, new production lines, and a second facility.
Jim brought five years of experience at Rowntree Hoadley as a Project Engineer, where he was responsible for upgrading and relocating panning operations and worked on iconic products such as Smarties, Jaffas and sugar-coated high boil centres. Serge commenced full-time employment at Rowntree Hoadley in 1975 as a Trainee Chemist before transitioning to the Campbellfield factory. There, he played a key role in product development, converting production processes to the metric system, assisting quality control engineering, and revamping procedures for new machinery installations and packaging operations. Together, their technical expertise and hands-on knowledge formed the strong foundations of The Confectionery House.
Today, we manufacture both a premium chocolate range and a compound chocolate range, producing our own chocolate using Australian sugar and milk powders, combined with cocoa butter, cocoa liquor, cocoa powder and cocoa butter substitutes. With over 45 delectable products in our range, we offer a flexible manufacturing platform — whether you’re after bulk supply, retail packs, or private label solutions, we have a sweet solution for you. Our focus has always been to provide high-quality confectionery for repackaging within the market that is competitively priced, reliable, and readily available. In 2019, we proudly released our first retail packs, marking an exciting new chapter in our journey.
Specialising in sugar panning, chocolate panning, chocolate formulation, enrobing, moulding, and traditionally made honeycomb, we use local Australian ingredients whenever possible to create the melty goodness we’re known for. Our success is attributed to following time-honoured recipes and producing quality confectionery with integrity.
Now under the management of Jim’s son Ezra, The Confectionery House continues to stir up innovation with exciting new products, staying ahead of trends while honouring the craftsmanship and values the business was built on. The industry may have evolved, but our passion for premium sweets remains the same.
